Were the first sparkling bubbles born in the Aude?
Long before Champagne established itself as the world’s sparkling reference, a quiet corner of the Aude was already making a name for itself with a wine that… naturally began to sparkle.
The year is 1531, in the cellars of the Benedictine abbey of Saint-Hilaire, near Limoux:
a monk notices that a wine bottled and tightly sealed with cork has begun to produce bubbles.
The first documented “brut” in history has just been born.
This Blanquette de Limoux, proudly considered the ancestor of great sparkling wines, appears early in written sources: an archival document dated 1544 attests to its existence and its unique character, making it one of the very first sparkling wines ever recorded.
Over the centuries, the “little white” — la blanqueta in Occitan, in reference to the Mauzac grape — became the emblematic wine of Limoux.
Even today, Blanquette AOC owes its identity to the predominance of Mauzac (at least 90%), complemented by Chardonnay and Chenin Blanc, crafted according to the traditional method with a second fermentation in the bottle.
In 1938, Blanquette de Limoux obtained the Appellation d’Origine Contrôlée, an official recognition of its ancient craftsmanship, its cool hillside terroirs at the foot of the Pyrenees, and a history that continues to fascinate wine experts and historians alike.
Behind the festive image of its bubbles, Blanquette actually tells a deeper story:
the creativity of the monks of Saint-Hilaire,
the enduring winemaking heritage of the Aude,
and a discreet elegance that resonates today with a refined, understated vision of luxury.
